A while back, we were recording our Dutch ‘Kookpotcast’ or ‘Cook-podcast’ (not a very flattering name in English, we know) at the Foodie Festival in Amsterdam. What we do in this podcast is prepare historic recipes (from the period from 1500 until 1850) and throughout the process, tell a little bit more about the background of the dish. We have a lot of fun doing this, and at the festival, we got a nice request: whether we could do the episode in English too. Of course we can, and here’s the result: our first ever English episode of the cook-podcast (if we do this more regularly, we’ll need a new title).

This episode centers around the preparation of marzipan – which is really easy – its origins and its connection to the Dutch holiday of ‘Sinterklaas’. Before you begin, you may want to read the original recipe (this recipe is in Dutch, we put it here for the interested reader), the ingredients you need and the steps you are going to take.

 Hoe datmen Marchepeijn maecken sal

Neemt schoon ghemaeckte soete Amandelen, wel cleijne tot Moes ghestooten, een halve ponds, een pot wit Suijckers cleijne ghestooten, Roosewaters soo veel nodich is, mengelt te samen tot een deech, rollet geheel plat, op Ostien soo groot in de ronde als ghij begeert, ende backtse voorts in een heeten Oven. Sommighe nemen tegens een pont Suijckers, vier oncen Amandelen, sommighe meer, sommighe min, naer dat elck blieft.

Men macktse oock wel sonder Ostien, op dese maniere. Namelijc als het deech ghemeackt is, soo rollen sij dat plat op een tafel, die met Suijcker bestroijt is, leggen die daer naer op eenen platte steen, daer over stulpen sij, het opperste van een toertpanne, met vijer daer op, de welcke sij daer onder soo lange laten staen backen, tot datse genoech is.

Oock werden wel de Marchepeijnen op dese maniere ghemaeckt, namelijk dat sij die op eenen Marmersteen gieten, ghelijck men het Peerle-Suijcker doet, op dese maniere, siedet Suijcker als oft Peerle-Suijcker maecken wilde, daer in smijt de ghestoten Amandelen, mengheltse te samen op, bestroijt den Marmersteen voor eersten, met stof-meel, daer op giet het ghesoden Marchepeijn.

Dan de eerste, en de tweerde maniere, is de beschte.

Ingrediënten:

250 grams sweet almonds or almondsmeal
250 grams powdered sugar
A few splashes of rosewater
A little bit of water

Stappen:

0. Blanche and grind the almonds
(skip this step if you already have almondmeal)
1. Mix the dry ingredients
2. Add the fluids
3. Knead figures out of the paste
4. Optional: bake the figures in the oven

Everything set? Then you’re ready to cook and to listen. Have fun!
